Tzatziki - fresh yogurt, cucumber and herbs (Greece)Tzatziki is a popular dip combining fresh yogurt and cucumber with fragrant herbs and olive oil. It is excellent with grilled meats or simply as a dip for pita bread.
Ingredients:
1/2 C yogurt (the traditional Greek method calls for using strained yogurt, which has a much thicker consistency)
2 medium sized cucumbers
4-6 cloves garlic, crushed
a splash of lemon juice or vinegar
2 tsp fresh dill, chopped
2 Tbsp MOREA Extra Virgin Olive Oil
salt to taste
To strain yogurt, pour 2-3 cups of yogurt into a double-thickness of cheesecloth, tie in a ball, and let hang over a bowl in the refrigerator for a few hours, or overnight.
To make tzatziki, peel cucumbers and grate. Squeeze grated cucumber, draining out as much water as possible. Salt the cucumber, then add the yogurt, garlic, lemon juice or vinegar, and dill, and mix. At the end, blend in the extra virgin olive oil. Before serving, you may wish to drizzle oil on top.
