Soy Sauce is the basic seasoning of Asian cooking. The varieties of soy sauce are endless. Indonesian soy sauces are called kecap manis (also spelled ketjap manis) or ketjap asin. The sweeter soy sauces (Ketjap Manis) are thick, syrup-like, and available in sweet to medium sweet flavors. The Ketjap Asin is salty and is considered to be light or thin.
