Dutch Potato Salad (Holland)3 1/2 pounds cookied potatoes, diced
4 hard-cooked eggs
1/2 head lettuce, shredded
1/2 pound crisp-fried bacon, crumbled
1/3 cup chopped onion
Dressing:
3 tablespoons flour
2 tablespoons sugar
1/4 teaspoon salt
1/8 teaspoon paprika
2 eggs, beaten
3/4 cup water
3/4 cup vinegar
1/2 cup sour cream
1 teaspoon Zaanse Mustard
Combine all salad ingredients and toss with dressing:
Dressing: In a saucepan, combine flour, sugar, and seasonings. Add eggs and water; cook over low heat until thickened. Add vinegar and blend well. Fold in sour cream and mustard. Pour over salad and toss to coat. Serves 12 to 15.
